Do April (snow) showers bring May flowers?

6 inches ... in April?!Anyone who has spoken with me since moving to Denver has heard me repeat in a sing-song voice, similar to a small child’s toy, the kind that people buy for other people’s kids and not their own, “I love the snow, I love the snow!” On and on (and on) I’ve gushed about the white powdery stuff and how marvelous it is that Denver is blessed with the stuff. Everyone morning that I woke up and found the city blanketed in snow, I was in awe of the stuff, like I’d never seen it or something, like I’d never been on umpteen or so ski trips with the Correll fam.

A few days ago, though, my internal record player did not get stuck on the “I Love the Snow!!” tune when I woke up to an April SNOW shower, oh no. In fact, I think the record player died, or maybe it just needed some new batteries. Do record players have batteries? Hm, don’t think so. Anyhow, I was not suddenly manifested into a morning person by sight of the white cloud that covered my car that morning, which is what usually happens when it snows (even before my coffee.)

Instead, my conversation with the snow went something like this:

Here is the recipe for the Applesauce Banana Bread I mentioned in my last post. The adjustments have been made for baking at 5,000 feet.

You will need:
1 cup brown sugar minus 2 T
1/2 cup applesauce
2 T vegetable oil
4 ripe bananas, mashed well
2 cups flour
1/2 t baking soda
1/4 cup + 4 T vanilla soy milk, mixed with 1 t apple cider vinegar (or 2 eggs)
1 t vanilla (preferably from Mexico)
1 T ground cinammon
1/4 t ground allspice
1/2 t salt
8 x 4 inches bread pan, or slightly larger
nonstick cooking spray

Optional
Handful of chopped walnuts …click here to read more →

Cooking in the clouds

A few weeks after moving to Denver, I prepared my ever-yummy Applesauce Banana Bread to share with my new roommates. I had prepared this recipe dozens of times before and it was always a success with anyone who tried it, so you could imagine my shock when I opened the oven and found someone else’s banana bread inside it.

That’s right, someone had apparently swiped my perfectly formed loaf of Applesauce Banana Bread with a huge brown brick of a loaf that was so heavy and dense, it would have broken my toe if I had dropped it. Where was MY Applesauce Banana Bread, which was known for its perfectly glazed golden crust and its slightly gooey goodness? I just stood there in the kitchen, bewildered. Why hadn’t the dogs gone wild when this intruder waltzed in to the kitchen and swiped my loaf? Some watchdogs — there wasn’t a drop of blood on the floor. Oh, no — it must have been someone the dogs knew …

Then it hit me.

Of course! I was cooking at 5,280 feet, definitely considered high altitude, and I hadn’t made a single adjustment to my usual recipe. Drrgh!

Don’t make the same mistake I made. …click here to read more →
